Brewing
There are different ways to brew a tea:
- Filter teapots
- Single teapots
- Individual tea filter papers
- Single infusers
- Cups with filter
Brewing: dose and temperature
- To brew fermented and semi-fermented teas the water should be around 95° centrigade. For black and white teas, between 70° and 95° centigrade.
- The approximate quantity per cup, depending on the type of tea, varies from 1,5 to 2,5 grams.
- Leave the lid of the teapot on for around 3-5 minutes, depending on the type of tea.
- Do not wash the teapot with soap; use bicarbonate instead.
Brewing: the procedure
Bear in mind five simple rules and you will get the best from every cup of tea:
- Heat up the teapot before use.
- Add tea leaves (one teaspoon per cup and one additional for the teapot). Leave them inside for 3 minutes before adding water. Use filters that� allow the expansion of the leaf.
- Add water (never recently boiled)
- Let it infuse the appropriate amount of time. Longer brewing can lead to bitter and astringent flavors.
- Separate leaves from the beverage to avoid over-infusion.
Do not re-use the same tea leaves, unless you are using best quality tea, like the oolong tea, etc.
