Temperature and water quality
The optimum temperature to optimise the extraction process is between 85 and 95 degrees centigrade; that is, before boiling.
Likewise, the quality of the water is essential to enjoy of a good cup of coffee. Use pure and fresh water.
When possible, use only natural mineral water; water from the tap might have high lime contents which would badly affect the performance of the coffee machine and the quality of the espresso.
