Extraction
It is the amount of ground turned into beverage. The optimum extraction ranges between 18% and 22%.
Concentration
It is the percentage of coffee in the total beverage, being the remaining part, water. This concentration can vary from 1.2% in filtered coffee up-to 4 % in a strong espresso.
